Soba Noodle Salad. These traditional buckwheat noodles create a wholesome additional to a Japanese inspired salad. If you are hosting a Japanese themed party or simply sharing a meal with friends and family, your guests are bound to ask you for this recipe.

Soba Noodle Salad
Soba noodles make a terrific base for a wholesome salad. Look for and savour the true buckwehat flavour.
Equipment
- Vegetable peeler
- Large Saucepan
- Colander
- Small bottle with lid
- Large Serving Dish
Ingredients
For the dressing
- 200 gm tamari or soy sauce
- 2 tbsp rice wine vinegar
- 1 tbsp yuzu juice
- yuzu zest
- 1/2 tsp honey
- 1 tsp chilli sauce
- 1 garlic clove
- 1 tbsp grated ginger
- 1 tbsp sesame oil
- 2 tbsp vegetable oil you may substitute vegetable oil with nut oil
For the salad:
- 200 gm soba noodles
- 1 cup carrots, julienned
- 1 cup edamame beans, cooked and shelled
- 1 cup capsicum
- 1 cup cucumber
- 1/2 cup snow peas, slice diagonally
- 1/2 cup red cabbage, shredded
- 1/4 cup eschollts, thinly sliced diagonally
- 1 tbsp ginger, julienned
- 2 tbsp sesame seeds, toasted
- 1/4 cup fresh coriander
- pinch of pepper
