Soba noodles make a terrific base for a wholesome salad. Look for and savour the true buckwehat flavour.

  • Large Saucepan

  • Large Serving Dish

Ingredients
  

For the dressing

  • 200 gm tamari or soy sauce              
  • 2 tbsp rice wine vinegar
  • 1 tbsp yuzu juice
  • yuzu zest
  • 1/2 tsp honey
  • 1 tsp chilli sauce
  • 1 garlic clove
  • 1 tbsp grated ginger
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil you may substitute vegetable oil with nut oil

For the salad:

  • 200 gm soba noodles
  • 1 cup carrots, julienned
  • 1 cup edamame beans, cooked and shelled
  • 1 cup capsicum
  • 1 cup cucumber
  • 1/2 cup snow peas, slice diagonally
  • 1/2 cup red cabbage, shredded
  • 1/4 cup eschollts, thinly sliced diagonally
  • 1 tbsp ginger, julienned
  • 2 tbsp sesame seeds, toasted
  • 1/4 cup fresh coriander
  • pinch of pepper
